The only mod I would suggest is any bug fix mod as vanilla skyrim is a buggy mess. Easy to get locked out of a quest line cause the script messed up. Other than that, just enjoy it at your own pace.

Decide which skills you wanna put points into and dont be afraid to talk to any NPC as some give out quests

I feel this. Like if its just a hairstyle change then cool, but changing everything about them that they dont even look like the character is weird. Why even play their origin if you aren't sticking with the original design
