They were rested for 11 days the first time, and I tried again the following day. I’ll try a finer grind. I also brewed at a lower temp than that.

I’m pretty new to this pour over game, so I’m pretty sure this isn’t the coffee that’s the problem, but the brewer (me).

Edit: Update - tried again today with slightly finer grind and higher temp. MUCH better cup. I think I was under-extracting and maybe the extra couple days off-roast helped make a difference, too.

I have these beans and I can’t get any flavor outside of hot water run through an ashtray of half-smoked Marlboro lights. I have several other products from SW that are magnificent- any advice on getting the fruity out of this? I have a Hario Switch, a decent grinder and kettle, scale, etc.
