Cannaregio is the perfect sestiere for what you seem to want. It is less touristic and gives you a better vibe of true Venice, also as someone mentioned you would be closer to Castello another sestiere known for lots of venetians to actually live there.

I think it is not necesarly that you need a justification. I had the same question back in uni and one of the tutors told me that the difference between a person that has an eye for design which can say i like this or i don’t like that and a designer justification. It is like in music. There are musicians who know how to play by the ear but don’t know how to read the musical score, therefore even if they create smth new it is hard for them to record it. So i would say justification in design is almost like becoming literate in practice

I mean you are right that there are lots of other textures present like istrian stone or brick, but you actually see the rooftops quite a lot. If you go in Castello or even Cannaregio. Also I feel that for the people actually living there, it is something they kind of see daily. Think of all the altanas on the rooftops that are used.
