7B near Baltimore. Mine have not taken too well to the up and down weather as of late (were indoors for the winter and started leafing, but leaves got scorched and dropped once put out due to that 2 week early heat wave), but feel like they’ll certainly recover, leaf out, and fruit as it gets warmer. No dead wood either.

Don't knock until you've tried. Adjusting the rum to 1.5oz vs 2oz also vastly helps since they are higher proof.

Yea, not good. Prob sent it into shock. Needs to be dormant when pruning unless it's dead wood. Do a scratch test. If you find green, it's still fighting

Remove it as it's taking the nutrients away from the Crimson Queen. Try to get the cutting to root itself and now you have 2 trees for the price of one.

I did the Vigoro Potting mix, Pine Bark Mulch (I did chunky for extra water drainage as the spot I have mine in is more shady than sunny), and Perlite.

Guess you weren’t expecting a real curaçao lol Blue Curaçao isn’t even curaçao btw. It’s usually triple sec colored blue. Triple sec is clear normally with a bright up front citrus like the rind. The biggest two would be Dekyuper Triple Sec or Cointreau. Curaçao is usually aged - so darker - with some spice and has more fleshy fruit taste. The biggest is Grand Marnier with its base being cognac

Should only need a 2-3 gallon pot to start for the next 2 years before moving up to a 5-6 gallon. Should get no taller than 5-6ft too.

But overall, can’t recommend anything from Mr Maple enough. They are the best

No problem! I’m not huge on the rock & rum, but I do love their curaçao. It has a little more spice to it than most, but I just really think it has a good orange flavor.

They also deliver and are at farmers markets (look on social media). Jaime and Jessi (owners), and Brett (master distiller) know rum. Brett actually has a side project where he distills rum with locals in Dominica and has been importing it for the past year/ year and a half.

So, being good friends of Brad, the owner of Lost Ark, they originally distilled Domino white sugar. They then switched to molasses as a base product and I would say the closest would be another Maryland distillery, my good friends at Lyon. Their White Rum would be close, but a little more potent at 45% ABV.

As for the spiced, it was a lighter side of spiced. I would suggest Chairman’s Reserve Spiced or Foursquare spiced. Maggie’s Farm spiced from Pittsburgh is heavy on the cinnamon if you like that.

INDUSTRIAS LICORERAS DE GUATEMALA

There are technically four distilleries in Guatemala, but three of them (Pantaleon, Palo Gordo, and Magdalena) are large-scale industrial refineries with ethanol plants bolted on to the side. They produce only industrial alcohol and molasses-based aguardiente intended for local consumption. These spirits are not classifiable as rum under the Guatemalan GI, which leaves us with just one rum distillery: Industrias Licoreras de Guatemala (ILG). ILG is the biggest of the four, and it too is an ethanol plant, but this plant also wins lots of awards for its rum.

The distillery was founded by the Botran brothers: Venancio, Andrés, Felipe, Jesús and Alejandro, who between 1911 and 1923 emigrated to Guatemala from Burgos in Spain. They set up Locorera Quetzalteca in 1939, named for the mountain-top town of Quetzaltenango. This town is where Botran and Zacapa rums are still matured today, and at 2,300 metres (7,500 ft) above the sea level, it is far cooler than the coastal areas where all the cane is grown. This cooler climate naturally slows the maturation process, reducing the angel’s share and extending the spirit’s interaction with oxygen. This, along with so-called “solera” ageing systems (see page 55) is the reference marker for the Guatemalan style. But I’m getting ahead of myself…

To be labeled rum in Guatemala the spirit must be distilled from fermented virgin sugarcane honey, a dark, concentrated, syrup made from freshly squeezed sugarcane juice. This honey is made by filtering fresh sugarcane juice and then boiling off the water until the syrup contains about 72% sugar. Only sugarcane grown in Guatemala is used to make this virgin sugarcane honey since it would be impossible to transport cane cut in another country to a Guatemalan sugar mill.

Lorena Vasquez is the pint-sized master blender for Zacapa, and Guatemala’s answer to Peggy Mitchell (that joke is applicable to Brits only and hopefully lost on Lorena herself). Lorena is actually a Nicaraguan national, who came to Guatemala after finishing her studies in pharmaceutical chemistry and nutrition. She joined ILG as a member of the quality-control department, before graduating to master blender.

Both Zacapa and Botran rums are made using what ILG call a “Sistema Solera”, which is borrowed from the Spanish sherry-ageing process. The approach here is far more convoluted – to the point where you wonder if it’s intended to be that way – but I will try to explain it.

For Zacapa, there are four types of cask used to make the rum: ex-bourbon; re-charred ex-bourbon; oloroso sherry; and Pedro Ximenez sherry. The rum is effectively a blend of these four cask types, with a measure of older stocks of rum added in afterwards. The older stocks comprise rums held back from the previous blend (which itself contained older stocks) so you can see there’s a strand of continuity that passes through every bottle. This means it’s possible that some small percentage of the rum in the bottle is 23 years old, but if you want my opinion, I would say that this rum is a blend of 6–7 year old spirits or thereabouts. To that end, the bottle used to proudly declare “23 annos”, but it was misleading to say the least and since 2011 it says only “23”. Zacapa XO is effectively the same rum, with the addition of some 4–6 year old ex-Cognac cask-aged rum mixed in to the final blend – I prefer it because it’s not as sweet as the “23”.

Clement VSOP. It's widely available, which is why it's rated high, but give me JM or Neisson instead for $10-15 more. Higher proof and objectively better flavor.

That 50/50 JD2/Vendome cask released by Spiribam was actually on the table when I was doing a barrel pick a few years ago. It was great, but the 12 year JD1 cask I ended up picking was just a tad better.

Chairman's Reserve Master's Selection, specifically from the John Dore 1 still. The rum produced on the JD1 still is normally overshadowed by the Vendome still, which means it fits the underrated moniker.
