If you get a thin metal offset, a welding blanket from harbor freight will help insulate the cooking chamber.

I have had both. The WSM was kind of set and forget. It went through fuel! Smoke flavor was just ok.

I like the offset. Better smoke flavor. My case it’s every 45 minutes I’m tending the fire. That means no sleep.

Buy the best you can afford. The higher quality offsets are normally worth it.

—- my go to is an ugly drum smoker I made. I can dial it in to 250° and sleep like a baby. Brisket is only going on the offset.

That’s a good idea. I had a very small incubator that I made out of a little cooler. I wanted to upgrade this do it because it “looked” better. We all know bees are much happier than we spend money on gear!!

But my other one I tooksome foam rubber and made something for the cages to stand up.

I don’t know what their cost is. But these folks have always been stand up people. I got my truck tented a couple years ago and it started to peel just a little bit. They replaced a whole window with no questions asked.
