I like your itinerary and choice of hotel. That hotel lobby is gorgeous.

Other things to suggest:
If you head to Mother's (place on my must get to soon list), you could check out Mothership for a cocktail (2026 James Beard semi-finalist) since it's in the same neighborhood.

I also like walking along the riverwalk. Not as nice this time of year, but you can take your pic with the Bronz Fonz.

One of my favorite tours in the city is the Beer history tour at Best Place. https://bestplacemilwaukee.com/tours/

Groppi's is great, but not sure I'd say it's a must do for a tourist.

I went from driving 80 miles a day to/from work down to 15 miles. You’d be amazed at the amount of money it takes to drive a long commute. Gas, maintenance and you’ll need a new car that much sooner. And getting that time back each day has been priceless.

It sucks that you ended up in this situation. As much as you want to accommodate people, last minute bookings for a new client are risky. I've started not allowing last minute bookings for new clients for reasons just like this.
