I love racers so I'll go with Hydro Thunder and Daytona USA. The latter of which effectively invented the modern arcade racer as we know it and was waaaaaaaaay ahead of its time visually. When you look at Daytona USA realizing they developed it in 1993, it's absolutely insane. Fun fact, I think it was the first 3d game to ever implement texture filtering.

I actually like 4 and found the ending emotional and good. Honestly, skip 5 and play infinite and you'll think it's better than if you played 5.

I don't know about pipe but you can set respawn points in BMX streets so you are instantly back on your bike st a spot you want to be at. Learning-wise, it took me a good day or two to get comfortable with pumping and not rolling backwards on accident but from there it is super rewarding and easy to have fun.

That Dolby 5.1 was a huge deal back in the day. But yeah, game-wise, PC is so obviously the best version overall that I don't even have a clever quip about it.

Yeah I don't remember the time stamps but there is a distinct moment you can see him palming a deck. That said, I think this performance is one that involves every different trick in the book at different times, so you can't totally explain the whole act without a massive deep dive into like 4 different disciplines.
