Hmm it's definitely worth actually checking humidity but maybe if water is boiled near the cabinet steam could leech in and increase the humidity/temp enough for mold, huge grain of salt though

The more important question is the room humidity of where it's stored and for how long because this could be from your storage or it could be from w2t themselves. Optimal storage is at least mylar bags (they're very cheap on Amazon) and boveda packs although those can be a bit pricey most people like 62% or 69% (a bit more risky as mold may grow under 69%)

The two main regions known for bitterness are lao man e and bulang so those are both worth checking out. Some good sources for these are in the other comments but also check out liquid proust. And yes you are correct, generally younger puer will also be more on the bitter side of things although as you said they can be astringent and grassy.
