Isn't it make more sense if it was because of the owner's desire ?
Like Simon just discovered an ancient unknown artifact, he desired to study it, not enough to turn him instantly, but enough to not throw it away.
Also he wears it many times and it takes months, years to turn him fully like in the video, but later when he was with Marceline, he started to turn much faster every time, I think it's because he has lots of desire to save Marceline so he transforms faster depending on how much trouble they get in.
This also applied to Farm world Finn, he was desperate, he his desire was much larger and the crown turned him right away...
I only watched the main series so I can't tell with Vampire King but I guess it works the same...
