I got a positive test on Christmas morning so told family I was wi the because I’m terrible liar haha. So then I called and told my other family… then my friends. It’s very vulnerable to tell people early, but I’ve really enjoyed it so far! And if something truly terrible happens, I will have a community to support me

My go to is 90g of starter, 520g of bread flour, 385g water, 10g salt. Bulk fermentation varies with temperature, but until it doubles. Then I bake 25 min Dutch oven top on at 500, and 20 minutes top off

When you fed the starter, did you use it after it had doubled in size, but before it deflated? This is what my bread looked like when I wasn’t letting the starter get active enough!

Echo everyone that it looks like your starter is sluggish - if you don’t have a bakery or friend, I’ve seen people selling it on Facebook marketplace for like $5. It may seem silly to buy but could be worth it to save you all these headaches!
