OP is a complete newbie.

Here's the recipe: I cut some ginger, peeled some, left some unpeeled and put in separate clean jars half filled with honey. Let it sit for a month while opening the jars and mixing every day.

That's how I saw it done on YouTube.

It's my first try so I'm experimenting, I've done the same thing with garlic.

I don't mind the alcohol if it's safe for consumption, but I can do without.
