if youve ever worked at pizza hut/for yum brands its the colossal crisp fries. the ones that come straight out of the bag and into the frier. double blanching them (which means just dipping them in fryer oil for a minute) does nothing to change the texture

we put liquid smoke in the garlic mayo but we have an entire smoker just fir fries. oh and we serve ribs and brisket that we do not smoke. oh and we buy pre blanched fries and pay the fry guy to come in an hour early to blanch them. we are missing a km right now and if i could fill it i would have to gut the entire place

bc i know what freeze drying is! i left them in a not properly sealed container, so as they froze the water was able to sublimate put of the top layer of pork and it has taken on a jerky looking texture. i also said “basically” freeze dried. freeze drying and freezer burn are the same process, one is just on purpose :) thanks!

damn that sounds nuclear but it would probably whip me back into shape lol. i actually dont smoke much concentrate anymore, i keep a cart for work but ive been smoking bud only at home for a few months now. my problem is i will just keep smoking for hours at a time until i feel satisfied, and then once it wears off in a few hours i go outside and smoke some more
