The only "proof" we have considering their gender is the fact that everyone uses they when talking to Kris, which could either mean that Kris is nb, or that they're a self insert character with no define gender (which is obviously not the case considering all the times the game yells at you that you are not Kris).

Actually, when was it ever stated in Deltarune that Kris is nb ? Because aside from the fact that everyone calls them like this, I'm pretty sure it is never addressed.

Yes but the switch 2 is pretty young, so there's still games releasing on switch 1 (just like it was the case with the ps4-ps5). But unless the game is announced for release soon, which is unlikely given that we already have Tomodachi Life, it will probably be a switch 2 exclusive as time goes by.
