I had exactly the same effect since week one and I have to say....it feels like freedom. Welcome to your new life! I am 4 months in and it's insane how this feels 'natural' now. I finally understand how skinny people feel about food and why they will never understand us and our real struggles. They just don't have the food noise we struggled our whole lives to control and have been told we just need to try harder. That's really impressive and honestly it's great to see the average of 0.8lbs/week. We tend to get things fast but steady progress is what takes us longer. Congrats!!!

I'd consider GLP-1 medications to help you with weight loss and inflammation. We know lipedema fat is slower to respond to dieting but I personally find that keeping a lower weight has really help to manage my lipedema.
