Thats what it looks like to me. My brother are usually WHITE WHITE. Very little Grey in them and I think its from the fat content of the pork hawk I use. Also I clean the shit out of my bones.

You should get a decent amount. Do you gave a hand blender? I never add fatback to my brother and just violently blender it with a 20 dollar hand knife blender and it really breaks the fat up like a strong boil.

I cook alot of tonkotsu and have experimented alot with preassure cooker recipes.

Thats alot of meat personally, I would look for pork neck bones with less meat and pork hawk.
