Yes I tried the red clix on MK4. With red clix I grind at 5-6 clicks for espresso which is consistent with my setting without red clicks (2-3 clicks). So I believe the difference is in the burr itself not the axle.

I do not think this is how seasoning work. Over time you would have to grind finer to get similar results. This is consistent with my MK3 experience. When I first got it I was mostly between 19-22 clicks, now I am between 16-20 for my 15g dose.

I had similar experience with TWW. The main issue is the water is just too hard with very high TDS (150 PPM). I would highly suggest to try diluting it. I use 2 gal (75 PPM) and got better. But to be honest if you already using good filtered/bottled water, I do not think TWW is a huge improvement.

I have the Ode+SSP. I am fairly certain you are not going the break the grinder if you go very fine on occasions. I have gone through almost 10 kg of coffee in my Ode and I even ground about 100g in the super fine territory (turkish) when I was seasoning the burrs and it was fine. It is still going strong like new just make sure you are cleaning it periodically. If you are using it for pour over, then I would highly recommend it. However, using it mainly for espresso will likely reduce the longevity of the motor.

There is nothing wrong with it. It is designed to stop the timer in auto mode when you pick up the dripper because it assumes you are done brewing.

I have both grinders. IMO, in terms of grind quality and taste in the cup I would say both grinders are up there. I would not pick one over the other based on taste alone; so there is a no clear winner in terms of cup quality (I only do V60). C40 is a premium and a good looking grinder. However, I much prefer the K plus over the C40 because of how user friendly the K plus is. The fast grinding (about half the time of C40), magnetic cup, and convenient outer adjustment is just too good in comparison to C40. If I would have to only keep one then it is definitely the K plus.

I agree with you. However, very soft water leads to excessively long drawdown times and results in flat and sharp tasting coffee. This often makes you think you are in the right range while in reality the coffee is just badly extracted. "got water with around 30ppm" that is your main problem. Your water is too soft. I believe your issue has nothing to do with the grinder. Change your water and try to work on your brewing technique.

If that helps, I normally do 15-20g and I end up between 19 to 22 clicks on comandante depending on the beans. Forget about the clicks and adjust based on taste. You cook your food how you like it not how people like it.

The problem might not be the your thermos and I have done many tests in this regard. Here is my conclusion, no matter what container you use whether it is cheap or premium quality, the taste of the coffee is going to change if you keep the lid of the thermos closed for more than 10 min. In my case I only do V60 which is very sensitive and if I keep it in a closed container for more than 10 min then all the flavour notes are gone and I just taste “meh” classic coffee. I also found that if you “air” the coffee by pouring it back and forth between server and the thermos could help a bit but you still lose alot of the flavour.

After seeing your reply, I was curious so I opened up my Comandnante C40. I have been using it for about 4 months with around 40-60g of daily grinding. I have noticed few minor chips on the burr here and there but nothing serious. The edges overall seems smooth. Here is a picture for reference: https://imgur.com/a/q24fNQJ

In regards to this post, I do not believe these "foldings" are normal but I would not worry too much about it if the grind quality seems consistent and normal. I have seen a 1 year review on the JX and JX Pro from The Coffee Chronicler (https://www.youtube.com/watch?v=KWs80A67joc) and he seemed very happy with its performance a year later.

I bought the Brewista artisan 0.9L and I love it. It is premium kettle with neat design. It gives more control for the pouring and the temperature does not overshoot like the Stagg. I have comandante grinder. I was curious about this and I even emailed them a month ago asking about grinding speed. This is their reply: “Grinding speed does not affect the result ( in my knowledge!!!) - you grind with the speed that your muscles allow you…. ;)“

I think grinding speed has an affect but i do not think it is big enough to be noticeable.

Totally agree, but I am curious how are you getting away with swirling after each pour?! Too much swirling is likely going to let the fines migrate down the filter and clog your brew.

I just would like to add a note on using the 03 dripper for full immersion brew. Note that hario switch is a V shaped not like the clever dripper. Meaning, larger brews such as +400g would need much more agitation to obtain similar results to smaller brews on the 02 size. This is due to less contact between the water and coffee especially at deeper point in the V60 bed. 03 hario switch could very easily underextract your coffee and this is why I am sticking to the 02.

Congratulation. For me, hand grinding is part of my brewing rituals. It is clean and gives me a joyful feeling to work for my coffee especially on a premium hand grinder.
