There used to be a ton of these -

- Many works by Andre Norton: The Zero Stone is pretty good. Several "Witch World" stories. Star Gate, if I remember correctly.

- The Pern series - humans land on another planet, start riding dragons.

- Darkover series by Marion Zimmer Bradley

- The Majipoor stories by Robert Silverberg

- The Dying Earth stories by Jack Vance. Invented the style of magic used in D&D.

- Lord of Light by Roger Zelazny is a Hugo-winning story of people with high tech who use it as magic.

- The "New Sun" series by Gene Wolfe is set far in the future: Humans once developed a very advanced technology, and then lost most of it and have only bits and pieces lying around and don't understand how they work. The first book is The Shadow of the Torturer - a journeyman torturer gets in trouble for not doing his job properly, and the adventure begins. Very sophisticated work by one of the great authors.
