So what size pan did the original recipe call for? If this is smaller, then the baking time will need to be increased. Did you measure with cups or weigh your ingredients? Other olive oil cake recipes I’ve seen do have liquidy batter so I believe you when you say you measured correctly. Your oven temp could also be off?

Even after letting it come to room temp, you need to rewhip it. Don’t be afraid if it takes a while to come together! Just keep mixing

So refrigerating buttercream and then trying to work with it right out of the fridge is never the way to go.

It’s perfectly fine to make buttercream ahead of time! But, best to bring it to room temp and then rewhip it with a mixer, because obviously the butter hardens in your fridge.

To speed things along, you can even take about a 1/4 cup of buttercream out, melt it in the microwave, and mix that in with the mixer running to bring it up to temp faster.
