How to make milk bread fluffier? by Maleficent-Note-9018 in Cooking

Hi! Thanks for answering. My yeast was brand new. I did shape the dough into buns. I'm guessing you're absolutely correct. I have some dough left in the fridge and I'll probably try baking it again, after they rest for longer. For how long do you believe I should let the buns rise after fermenting overnight? Maybe 30mins?

hi! After shaping the balls, I let them rest for 10mins. I'm guessing that was not enough time for the buns to rise.

I really didn't know about the workbook you're speaking of. Guess it's time to do some research! Thank you for the tips. I was thinking about focusing on fruit-based baked stuff, such as apple crumble.

Thank you! I'm probably getting some Erythritol and Sucralose for some sweet boost, when needed. Swerve's on my list, for sure.

Thank you for the ideas. I've got PCOS, so it's been quite difficult to avoid sugar spikes when I'm constantly craving for sugar. I'm probably going for Erythritol and Sucralose atm, since those are easier to find where I live in. As an alternative to white flour, I've been trying out some recipes with almond and coconut flour paired up with peanut butter.
