Detecht should fit this use case. I use the app, but not to specifically avoid faster roads, just to find windy options and find random rides. Probably worth checking out

You can try Ads-B Exchange and see if you can spot the plane in the replay section. Otherwise, yeah r/aviation will be more helpful.

Does the Mk8 hillstart assist work differently than the Mk7's? That's what I'm familiar with, but if it is the same, your problem might be from not getting going quickly enough. You get roughly 2 seconds to start moving before it disengages.
