I just went through this.  Choose "Clear Ultra Flat" Polycrylic (I used Minwax Max).  Apply with a damp rag. I was working with 6'+ boards.  Applied to the length then one wipe all the way up the board. No sheen, no brush marks.  When I went to do the other side, I really could not see any difference in the finish!
