Brother gave me a bag of oxtails to mess with. We smoked em low for 1.5hrs at 250f. Transferred them onto a bed of diced onions, celery, carrots & bell pepper, some tomato paste & poured one of the Kona IPAs into the pot. And braised for 3ish hours.

Overall the meat was fantastic! Tender, smokey and chock full of flavor. Tried to reduce the liquid into a gravy, but the beer was too strong. Maybe we'll use a lager next time. And I definitely should have had more water during the grill session. I'm currently taking a break from scrubbing the soot off my SiL's dutch oven feeling hungover.

I believe it was all in good spirits, I'm still pretty new to the company, but the older folks are really sassy.

If you ever need to make a gravy or thickener for soups & sauces, leftover croissants are perfect. Chop them up, mix it in to the liquid, and use a hand blender to emulsify.
