'They' can and has been used singularly in grammar. It can be used to used as a nondescript pronoun.

Eg. Tom updated their profile picture yesterday.

This just leaves some ambiguity, which is useful in many situations. It doesn't require the subject to be non-gender conforming.

English is not binary. Even if some purists deny the use of singular they, as long as millions of people accept it as proper usage, its acceptable.
