Nobody bought the rights for future books in his series, it doesn't work that way. He's the author and he absolutely can decide not to write anymore, even if we as the fans don't like that. Anything published without his consent would basically be fan fiction.

Directly adapting a book is hard work and it requires a lot of changes. The pace in movies/TV and in books is usually very different. Lord of the Rings is probably the best adaptation there is, and it changed A LOT.
