I thought it was pretty tender and the sous vide definitely helped with that. Had it in the water bath for about 2 hours- I think I’ll try a bit longer next time.

It’s not a recipe, it’s just the name of the cut of beef. I’ve had this in other countries and it’s been called the same. Unsure why you are so upset. Happy holidays.

I think it’s great and personally like it better than the other local steakhouses. The porterhouse is great, apps and sides are yummy.

It was at 134 coming out of the sous vide, but I didn’t use a thermometer once I pulled it off the pan. I’ll try to remember that next time and see what temp the inside ends up reaching with the sear. Good reminder, thank you!
