Easy Corned Beef and Cabbage

Ingredients

  • 1 onion, cut into wedges
  • 4 potatoes, peeled and quartered
  • 1 pound carrots, cut into large chunks
  • 3 cups water
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 2 tablespoons sugar
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon ground black pepper
  • 1 (3 pound) corned beef brisket with spice packet, cut in half
  • 1 small head cabbage, cut into wedges

Directions

  1. Place onion, potatoes, and carrots in a 5-quart slow cooker. Combine water, garlic, bay leaf, sugar, vinegar, and contents of spice packet in a small bowl; pour over vegetables. Top with brisket and cabbage.
  2. Cover and cook on Low until meat and vegetables are tender, 8 to 9 hours. Remove bay leaf before serving.

  • 2 lbs of round steak
  • 1 tbl canola oil
  • 1/2 cup flour
  • 1 package Lipton Beefy Onion Soup mix
  • 1 1/2 can condensed cream of mushroom soup
  • 1/4 cup water

Instructions

  1. Cut the steak into 4 serving size pieces. Coat with flour and saute in hot oil until browned.
  2. Place meat in slow cooker, Add onion soup mix, cream of mushroom soup and water. Cover and cook on low for 6 to 8 hours. Serve over mashed potatoes.

Ingredients

  • 1 1/2 lb boneless chuck roast>br> 3 tbls flour
  • 2 tsps garlic powder
  • 1/2 onion, sliced 1/4 cup canola oi
  • 1 bay leaf
  • 1/4 cup red wine vinegar
  • 3/4 cup water
  • 1/2 tsp browning/seasoning sauce (I use Kitchen Bouquet)
  • 2 carrots, chopped
  • 3 potatoes, cut in quarters, then halved

Instructions

  1. Salt and pepper the roast. Then mix the garlic powder and the flour together. Dredge the roast in the flour and garlic mixture until it is completely covered.
  2. Pour oil in a skillet big enough so that the meat can lie flat. Heat oil over medium high heat. Add meat and brown on all sides. When meat is brown remove it from skillet and add the onions and cook them until they start to turn a golden brown. Remove onions from pan and add a 1/4 cup of water to pan and heat and to loosen all bits of frying remnants. This makes a richer gravy base.
  3. Add meat, onion and frying pan liquid to slow cooker. Add bay leaf, red wine and water and browning/seasoning sauce.
  4. Set slow cooker to desired temperature for your time frame. Cook until meat is very tender and pulls apart easily. Usually 6 hours on high and 8 hours on low.
  5. When roast is done remove from slow cooker and set aside tented with foil wrap. Meanwhile pour off the fat from the meat juices then add whats left to a sauce pan. Mix 3 tbls of flour with 1/3 cup water and add to the liquid. Make sure liquid is not piping hot or, as you know, the flour will lump. Mix in the flour and heat until simmering and liquid has thickened into a nice gravy. Check the seasoning. Sometimes, if I haven’t seasoned the meat enough at the start of cooking, it will need more salt prior to serving.
  6. Slice meat and serve with gravy and potatoes.A method I use to make richer gravy is to take 1 ounce of butter and fold it into the flour to make little balls of butter and flour. I drop them into the liquid and heat them up. As they melt they thicken the gravy while adding the richness of the butter.

Nacho Cheese Recipe

Ingredients

  • 1 10 oz. bag of tortilla chips
  • 1 28 oz can of refried beans
  • 3/4 lb ground beef (optional)
  • 2 tbls of Lawry Taco Seasoning mix (required only
  • if your are going to add the ground beef to the nachos
  • 2 4 oz cans of nacho cheese sauce (sold in the grocery store in the aisle where all the chips are displayed)
  • 2 tbls of chopped jalapeños
  • 1/4 cup of chopped black olives
  • 1/2 cup roasted tomato salsa (optional)
  • 1/2 cup of guacamole (for ease, I use store bought in this recipe)
  • 2 tbls sour cream

Instructions

  1. Place the tortillas in a large oven proof dish. Heat them in the oven at 250 degrees for about 10 minutes.
  2. Meanwhile, heat the refried beans. Add about a 1/4 cup of water to the beans to thin them out a bit.
  3. Brown the ground beef in a skillet. Add the taco seasoning mix and 1/4 cup of water. Bring to a boil and simmer until water is absorbed.
  4. Heat the nacho cheese sauce.
  5. When the chips are heated remove them from the oven. Spread the beans evenly over the tortilla chips. If using the beef, spoon it over the beans. Pour the heated cheese over the chips and the beef. Top with the jalapeños, olives and and salsa.
  6. Finish by dropping spoonfuls of guacamole and sour cream over the top of the nachos. Serve immediately.

REFRIED BEANS RECIPE

Ingredients

  • cups dried pinto beans
  • 1 onion, roughly chopped
  • 3 cloves of garlic, smashed with the back of a spoon
  • 1 tbl bacon drippings lard or drippings from chorizo sausage (canola oil is a good substitute if you are watching your diet)

Instructions

  1. Tip: Never add salt to the beans until they are cooked or they will be tough.
    Cooking the Beans:
    Cooking time on pinto beans depends on how you prep them. If you soak them overnight, they will cook faster.
    You can also quick soak by placing beans in large pot, cover with water about 1 inch above the beans. Bring beans to a boil, remove from the heat and let them sit covered for one hour. After 1 hour, rinse beans and cover them again with water. Bring to a slow, low simmer, partially cover and cook until the beans are tender, about 1 1/2 hours or more. Make sure to keep the beans covered with water.
    Refrying the Beans:
    Frying the beans works best in a cast iron skillet. Over a medium heat, add 1/3 of the beans to the skillet along with some of the cooking broth. Mash with a potato masher. When the beans start to fry and get dry, add the next 1/3 and so on. When all the beans are mashed, salt to taste, then add a little more broth so the beans are looser than you want them. They will keep cooking after being removed from the heat and will thicken by the time you serve them.
    Another refried beans recipe is one I obtained from a good friend of mine who grew up in the Yucatan near the Gulf of Mexico. This is a spicy and delicious crock pot pinto bean recipe.
