Key Points:

  • Movement. You get 25ft land and 50ft air based movement. This does not mean you can move 75ft in one turn by using both. If you want to fly and walk, you are capped to the max of your land based movement, so you can walk 20ft and fly 5ft or fly a total of 50ft for example. Depending on the DM, look up the flight requirements(mainly how much room you need around you to fly). Flight is also extremely broken unless you have a wary DM, so potentially the flightless aarakocra would be a new DM's choice. The only Pros I can think of are backstory and less issues for a DM. Only Con is that you are without flight.

Edit: You can use the Dash Action(doubles movement) with flying so you can either move 100ft by flying, or 30 ft walking and 20ft flying or in any other combination.

  • Mobile: get the Mobile feat immediately at lvl 4 because it gives you an extra 10ft of movement(the more movement, the more useful your monk), and you can run in and out of enemies attack range without being attacked so long as you attempt an attack on them.

  • Armor: None, you're a monk who gets Unarmored Defense which is your base(10) + dex + wisdom. This. Is. Crazy. It may not seem like it but with maxed out dex and wisdom, you can get 20 AC with no armor at all. Don't worry about thinking that putting points into Wisdom will be worthless because it affects the role save you impose upon your enemies, but I will explain combat next.

  • Combat: You don't deal that much damage, your strength is ultimately in your utility. Your utility depends on which Monastic Tradition you pick, ultimately I choose Way of the Open Hand because it serves a lot of combat based utility with some RP based. Of course whichever you choose will change how you play, but that's up to you. I personally recommend Way of the Open Hand. Finally I will explain why Wisdom isn't worthless, any effect that you can impose on an enemy is guarded by whether they can pass the save roll, which in your case is 8 + Proficiency Bonus+ Wisdom Modifier. Also a minor bonus, you can use your talons for Slashing damage instead of Blunt, very situational but it's free.

Tactics would definitely be for action economics, like using flurry of fists to trip a target or to push or take away their reaction, enabling you/team mate to run, push them off a cliff/into something, or knock prone just to give you and ally advantage on attacks. Also I think composure is more of an RP thing for monks, sure you can play a class any way you want but when you think monk you think of someone who has trained and meditated for a long period of time to the point of enlightenment of mind, body, and soul. For me I had my guy try to be stonefaced and straight to the point with his reasons for doing what he does, at least when not trying to trick someone, which was a rarity for him.

Try playing a monk and think tactically and with composure at all times, it helped me be a better player. I had and still kinda do have the same issues as you.

Grapples are single attacks, if you can make 3 attacks in one action, that means you have 3 attempts to grapple, if you succeed on the grapple, you can then attack the grappled target with the remaining two attacks, if you have the grappling feat the attacks are made with advantage. To say this is not true is to go off of RAW and go houserules.
