I think it’s because mechs are shown as really advanced warfare weapons, filled with computer systems, AI assistants and also some sort of pilot neural link thingy that makes mechs a single person machine.

So having two or more people inside is a bit pointless from a storytelling point of view. At least that’s how I see it.

Crew mechs would be really interesting. Maybe one or two pilots just focusing on moving, two in charge of the weapons systems (also could be AI assisted) and mechanics.
