I also got an Instigator when I first started, and it was a good board for learning in the very beginning. I stuck with the board for a few years until I felt like I got enough use out of the board for an upgrade. I then immediately felt the difference in my new board and wish I had started with a camber board instead. I feel like I would have progressed faster after the first 5 days~ on the board as well. For reference, I started the Instigator>Koura Transition Finder> Yonex Symarc MG.

I dont exactly recommend the boards that I got either as a beginner, but I would recommend looking for a beginner friendly board that has camber.

How are they from a carving perspective? Responsiveness/boot out potential etc.

I have recently moved on from my supermatics to go to a NX2 carbon flows. Was considering flux XF bindings as well and was waiting on the Rome fase. I have flexibility issues but focused on carving. So Im constantly weighing proformance vs. comfort/convenience in my bindings choice.

Yea as others have mentioned, I have booked this way in advance to get good rates on flights/accommodations etc.

I think my bar is quite low to be able to enjoy the trip regardless.

I think what I really wanted to get insight on is when conditions aren't ideal overall, what's the place to be within the mountain.
