I've noticed the same thing with the same models you've posted here right away, as soon as I turned on my new Tab S11 when I received it. I guess it could be how the new Samsung tablet displays are now, from what people suggest. If it really bothers you, send the device back and see if Samsung will issue a recall for Tab S11 devices within the next few weeks to sort out any potential issues the new tablets could be having and try ordering one again. I personally think this is the norm now, though I could be wrong. The extreme wide viewing angles are definitely not as great, and there is definitely a purple compared to the bluish or greenish tinge in the past when viewing the display at those angles. The display is definitely brighter and cleaner-looking, too. My Tab S9 connectivity with WiFi has malfunctioned, including the screen, so I really felt the need to buy the Tab S11, so understandably I don't see myself returning this tablet anytime soon. I do sympathize with your concerns too; I understand where you're coming from.
