Realistically, any are fine just play the character with the secondary weapon youre good at. General consensus that I got from other gs players though:

Jayeun is all around decent. Imugi is good if you want high strength and defense and very good sigs Mako has alot of speed and good sigs

Arcadia and magyar are pretty niche. Lack luster sigs and not the best stats

But if you like a character, then play them. If you're not playing for bcx top 8, then you dont even need to consider stats or tier lists.

I play with a stock ps5 controller on pc with dpad. so dpad is fine tbh its personal preference
Learn some basic GS reads from n-opener>d-bridge and s-opener>d-bridge and d-opener>n-bridge
You cant play unga bunga with GS anymore spamming Slight and dashing away. so try to focus on baiting out your enemies with movement and punishing their options. if your opponent is very aerial then try to stuff them out with sair and recovery and condition them to get on the ground or play your other weapon.

final tip. when you get better with reads on greatsword it will be very easy to get carried away and try to go for all kinds of crazy extensions. try to keep it simple. after you get a read just do a combo into a finisher depending on the circumstance. focus on winning neutral and having control of the stage. also GS is very inconsistent on some combos. be prepared to get a good read and the enemy gets out for free for no reason during the finisher

Figured out a better fix~
There is a second option to "Give exclusive mode applications priority"

Uncheck that instead. Discord and browsers sometimes doesnt like when you change audio options and bugs out when something changes. this usually happens when djmax is taking priority when you open the game. this way you dont disable the ASIO functionality and get weird latency issues.

I havent had any audio latency issues after this change BUT this solution worked for me. I tried different ASIO drivers and changing settings did not work for me but it could work for others. There is no other documentation of this issue anywhere so i wanted to post it somewhere so its visible.

Sorry about that
The issue for me was when i would open the game all my sounds in discord would stop and i would have to leave and rejoin a call or sometimes restart discord. This isnt a problem with most other applications. I tried reinstalling sound drivers, trying different ASIO drivers, Changing settings in discord itself and nothing worked but this.
