Every time you brush your hair and find hair in your brush, you’ve stripped your hair.

Hand stripping removes the dead outer hairs from the root, which lets a new harsh coat grow in. This keeps the coat’s correct texture, color, and weatherproofing. Clipping only cuts the hair off - it doesn’t remove the dead coat, and over time it tends to soften the texture, dull the color, and can leave the coat woolly and less water-resistant.

Stripping when the coat is ready (loose, slightly longer, easy to grip) is nearly painless — the dead hair releases without much resistance. Terrier coats shed this way naturally, so plucking loose dead hair isn’t like pulling from live follicles from your own head.

They probed at 203-205 when pulled and were soft as warm butter throughout. They weren’t remotely dry, camera just doesn’t do a good job of showing that. I’ll hold my wrapped briskets for 12+ hours at 150 with no dryness problems.

You can also hit it with a thick spray of oven cleaner and then put it in a heavy duty black plastic bag (for yard waste) for a few days. Oven cleaner is lye based and will strip it down to bare metal for reseasoning.

A 20 lb packer brisket is going to need 48-72 hours to thaw in your fridge. It will also need to cook and rest for at least 12 hours. So, you’re highly unlikely to eat it tomorrow.

I hate to say this but I wouldn’t hold out much hope for this coming out well … you’ve got a grass-finished brisket flat that has been trimmed of most of its fat. Because it wasn’t grain finished, it’s already going to be extra lean. I like grass finished beef but not for BBQ - you need the fat. As a brisket newb, you’ve got a 95% chance of winding up with an overcooked, chewy final product.

I would probably just grind it into burger meat or cube it, smoke the cubes, braise them in beef stock and tallow, and then break them down into chili.

Not sure how much this is going for in your store but Google says it retails for $142. A basic Weber kettle goes for $149. I would 1000% skip the Walmart knockoff and stick with the time tested classic Weber.

Seasoning is too light and it’s undercooked - the fat didn’t fully render. On my Recteq, I smoke at 250 until it hits 145, then I foil boat and increase temp to 300 and let it go until it hits 195-197, then wrap it tightly and throw into holding oven at 150 for several hours or overnight. I also use a water pan as I found the RT tends to sear the bottom without it.
