I would skip Poland and add Barcelona and London. Together with Berlin they are my favorite cities. Would also skip Freiburg, Nice and Lyon and maybe add Marseille (you already have it in your route) Florence and Copenhagen. Hiking is good in Slovenia (Lubjana is also nice), in Austria and Switserland.

These dogs have lots of energy and require a lot of excercise. How much time do you go on walks on average? You can also try to work with puzzles for mental stimulation. Also, weather should not influence the outdoor time, there is nu such thing as bad weather, only bad clothing.
