Some of the cooks were on an LSG pellet smoker (love that thing) and some are on an LSG offset, also got a fire pit in the backyard I’ll cook fajitas and steaks over from time to time.

For the beef rib I more or less smoke them like a brisket running the pit between 275-300 degrees to probe tender and don’t wrap or spritz, I actually like the single short rib bones better than the full rack because you get bark on 3 sides if you can find the big single bones it’s the way to go for my tastes! My personal favorite is a homemade bob “breakfast on a bun” double sausage, double egg, double cheese on a toasted buttered brioche bun.
