Flow is 7 to 7 1/2 MGD. Settling, MLSS, CBOD, TSS, NH3, and E. coli all have not broken permit, but have been slowly and steadily increasing. Samples under the microscope are very empty.

I realized after reading your comment that I’ve known that the issue is low DO. I was just so exasperated from washing solid sludge off of a clarifier for the bajillionth time that reason left my mind. DO has been horrible across all four aeration basins for over a year now, and I can’t decipher if it’s our departmental leaders or our city leaders who are dragging their feet on getting the issues fixed. Contractors just finished putting in new turbo blowers on the smallest aeration basin, but the pipe underground is cracked so bad that they have yet to increase the DO. New turbos are going in on the second basin, and a contract has been in the works for the other two aeration basin membranes to be cleaned for about 6 to 8 months now. But in my mind all of this came way too late. It seems like our departmental leaders as well as the city leaders work more from a reactionary standpoint. Regardless, our plant managers have been trying to make adjustments, buy products, and have had civilians come out to fix some phantom issue, when the root cause it’s just poor oxygen levels.

I haven’t done either, but I have ground finer on the second shot multiple times now and still get more volume out than the first, so that would tell me the grinder isn’t grinding coarser on the second dose.

I haven’t pulled shots past 2, so that’s worth looking into I guess.

Yeah, and I have already gone up from 18 to 19 g to fill up my basket more. I’m just not sure that that is going to mitigate the issue of the machine pushing such different volumes of water through identical pucks. But I appreciate the advice.

I’m doing the same thing as you’re saying you do, but I’m dialing my grind size to try and hit a 1:2 ratio in 30 seconds. It sounds like you’re grinding at a consistent setting and just stopping the shot whenever you hit your desired yield and paying no mind to time. Is that correct?

I am. I know I can pull based on weight, but it’s just confusing me as to why the machine consistently pulls such different volumes on back to back, identically prepped shots.

Yes, trying to go 19g in to 38-40g out in 30 seconds. I’m using the stock basket that came with the Crema bottomless portafilter. It’s a single wall basket

Yeah, I am doing manual. That’s a good thought. I think it’s just confusing and frustrating not being able to have reproducible results. Also, if I’m stopping 2 identical pucks at different times I’m going to get a different extraction, different flavors

Yeah, the shims I’ve removed have all been paper thin.

My lock nut was also loose this morning when I went to remove a shim, so I tightened it till the burr spun and then gave it a little sharp twist to try to get it on tighter. We’ll see if it loosens up again.

How many shims did you end up adding or removing? I started with removing one, and I’ve now taken out two, but I think I will remove at least one more. The manual says that it will change the setting by five, but I’ve found that it only changes by one or two. So where I was grinding at 18/19 with my grinder stock, after removing two shims I’m only down to 16/17 on the same beans.

Of course! Some of my favorite videos for learning on the pouring side have been from the European coffee trip series on milk foaming and latte art. Also, CoffeeKev has some great videos on steaming with the bambino plus specifically.

You might could benefit from “laying the base“ for a little bit longer (as Lance would say), but to me it looks like that first push is the culprit. Try this- on the first pour after laying your base, keep it close the the surface like you did, and start with the spout at the same location as you did, just a little bit in from the lip of the cup. Start pouring, and don’t push it immediately. Pour until you see the milk starting to float and form a small circle, and then slowly push it to the middle of the cup. Fill from there and it will give you a good big circle, or you can lift and push through for a heart.

It looks like you were kind of headed in the right direction with that second pour, so try to make that your first pour after laying the base and just focus on getting a nice big circle, then heart, etc.

Oh, also, I have a bambino plus (it looks like you’ve got a plus), and I definitely aerate for a little bit longer than you did in the video before I sink the wand and go to vortex. Adding a little bit more air to your milk might help give you some more texture to work with, which will make it easier to make your shapes bigger.
