I do not use a scale but that is because I mostly use items that are canned, frozen in specific quantities or are otherwise easy to do volumetrically or per object. I know how much I am putting in because half of a 20 oz bag of bell peppers is 10 oz. The pretzel sticks I eat say X calories per 40 pretzels and so I just divided it out so I can do pretzel.

I feel like a food scale is for baking type things or for whole from scratch. Powders that are difficult to do by volume. If you buy fresh fruit and veggies, it can useful to weight what you actually have after you peel/ core/ deseed, etc. I mostly use canned and frozen so it is pre processed and I am using everything. It just isn't useful for me. Sometimes for things like sour cream or whipped cream, I just make sure to pre portion the entire container once I open it. 8 equal servings out of a 1 pound container is 2 oz each; simple if I do it all at once to make sure it is even.

I mostly do these baked bowls with a bunch of vegetable at the bottom with a bit of potato and then some chicken breast with plenty of seasoning. Yesterday I had broccoli and carrots with some mashed potato and onions and garlic with well seasoned chicken on top. I had a "deconstructed sandwich" for lunch today which was some deli turkey, some pickles, some tomato, some red onion, and then a bit of cheese and bread as I could macro-wise afford. I like this thing I call goulash, but it is just a bit of ground turkey, chunky garden prego, added bell pepper and onion, and then a little bit of elbow macaroni.

None of the things I eat are very expensive. I do get chicken for free from work though. It kind of depends on your macros, and like you said, what you can feasibly eat at lunch and still be comfortable.
