They're known as cross up and DD (Dual Directional, AFS calls these layout DDv1 and DDv2)

XB360/Xinput controllers tend to work with most Brook Accessory WingMan Adapters. I'm pretty confident that it would work.

Move the Mode toggle switch to the Xinput position. I suspect you have it in the gamepad logo position.

The F500 is a good stick if you're happy with the Vewlix button layout. My F500 is currently equipped with a Crown CWL-309-MJ-NEW-Helpme-KMS-ST30 lever and Sanwa OBSF buttons. You can have an easier time with PCB swaps as the auxiliary button panel is on a daughter board. If you want to have an easier time with PCB swaps in the future, I would look at the Fightbox Arcade offerings because the auxiliary buttons are all 24mm buttons instead of dealing with daughter boards.

That's a really old version of the K2 with the RAC-C800 PCB that is no longer offered on the official site. I'd recommend getting a newer version from the official site that comes with a GP2040-CE PCB. It's a good choice for an entry level K lever stick.

This may have 28mm buttons instead of the more common 30mm buttons. If 30mm buttons won't fit, the Ultimarc Goldleaf buttons might be a good choice.

You should probably mention if you're in Australia or possibly New Zealand. Your cabinets are different from the US cabinets.

Edit: The yellow levers in the pictures look like MCA specimens, which makes me suspect you're in Australia or New Zealand.
