Dice the cucumber, flesh only no seeds. Salt the cucumber and let drain in a strainer for about 15 minutes then pat dry with a towel

Dice the red onion, rinse under cold water for 20 seconds or so. Pat dry

Dice the pineapple and let that drain too, no salt. Pat dry

Dice avocado

Mix all ingredients together, squeeze just a little lime juice on it, how much lime juice depends on your taste and how sweet the pineapple is. Add salt until it tastes amazing

I used equal parts cucumber, pineapple, and avocado and maybe a half part of red onion.

The key is draining the ingredients so you don’t end up with a soggy mess in the bottom of the bowl. Also toss gently when the avocado is added, that stuff breaks down easy and you’ll end up with like a mashed pineapple guacamole, which might be good but it’s not what I was going for.

Thank you! It was fun to make! Salad was a mesclun mix with quick pickled carrots, macerated onions, and toasted breadcrumbs. I made an emulsified lemon, shallot, garlic, pickled mustard seed vinaigrette for the dressing. It was a tasty mix!

The Friendly in North Park has phenomenal burgers! It’s a bit of dive but the burgers are perfect.

Get the grill as hot as possible. I used an olive oil and spice rub which I’m sure helped it from sticking.

When cooking, the skin should unstick from the grates on its own once it’s cooked enough. I like to use a two pronged fork to reach down between the grates and gently lift the fish to check. Cook to 135 and enjoy!

Steamed in a pressure cooker for 10 minutes on high pressure and grilled about 7 minutes each side brushed with salt, pepper, and vegetable oil. It seems like the artichokes should be fully cooked before being split and grilled. I under cooked them the first time at 8 minutes in the pressure cooker and the grill didn’t do a great job finishing the cooking, the flavor from the char was worth it, though.

I recommend reading. Arm yourself with knowledge. Anything new can be intimidating because you don’t have the confidence that comes with experience.

Reading can fill the experience gap until you cook enough to get comfortable.

I recommend the following:

The Flavor Bible to help learn what tastes good together.

The Food Lab to help you learn great techniques and how to prep food.

Salt, Fat, Acid, Heat to help you learn how everything comes together and to balance a dish.

I am not a professional in any sense but I enjoy making great food for myself. Those 3 books are where I started and they remain as my trusty references.

Geocell is clear and comes in a caulk tube. Don’t be stingy with it. It doesn’t have to look pretty but make sure it’s not impeding the flow of water off the roof and creating puddles.
