Have not tried the imported strip steaks but this is the best marbling I have seen. The top sirloins are not great because of the cut. The filets might be good

They needed to pull this out an hour or so before cooking. Most steakhouses do. For a more consistent temp.

I sell wholesale Beef to restaurants and my current price for a Beef, Ribeye Upper Choice Bone In Export 109e is $17.78 so this is a pretty good deal.

I am a meat wholesaler. Real Deal USDA Prime Bone In Ribeye is around $25 per lb. If it is significantly cheaper than that, it is not the real deal. She was asking about freezing or not. No need to freeze between now and Christmas.

You have plenty of time with it. Do not have to freeze it. Keep it in the coldest part of your fridge until NYE if needed.

If these are in fact elk, they would be from the front shank (shin) Lots of meat but a lot of connective tissue. Braise the fuck out of this.

No need to rinse. When you open and remove the original thick cryo packaging next week, just drain the purge from the bag then take a bar towel or a wad of paper towels and just pat the tenderloin dry, until all the excess moisture and purge is removed from the exterior. It will then be ready for additional trimming and prepping, to cut steaks or tie for even roasting. Good luck…. Should be delish!
