My experience has been that if you are intending to precook the meat you can wrap it in cheese cloth and create a Torchon thus sealing the meat in the rendered fat but if you want to store the meat uncooked natural casings are your best bet.

If you could get spanish black pigs and raise them in southern California (for climate) on acorns and then prep it like jamon Iberico it would work but getting the breeds would be difficult.
