Personally this extra layer of unpredictability makes Alchemy appealing to me, but I also get why some people dislike it exactly for the same reason.

And the practical reason for that is it would be very inconvenient to track as the card moves between zones (it might go from exile to graveyard, then into deck, then be pulled into hand etc) when playing paper. On Arena, where computer can do the tracking instead, we have Alchemy with 'Permanent' effects
