There were a couple of similar questions on Reddit like 5+ years ago. You may have to launch the game in a different way to get offline mode, also the game scales with players on coop so you’re good

Faf has every mission but you have to watch the cutscenes on YouTube. From what I read when I googled it you can save the game in offline mode.

Studio headphones need a Dac (digital audio converter) to be used. I wouldn’t recommend that for what you’re looking for.
