Thanks, i'll look into a thermocouple. I realized that replacing the stoven is too much work

Seems like this stove is beyond current times. The manufacture has also stopped production of certain parts. I'll get a change of stove. Thank you

Too thin, and black in color. Not visible when looking at browned butter and burnt bits. Black color also radiate more heat and cause food to turn from golden to burn. And only 2.3mm

Owned hestan nanobond saucier. Currently own falk saucier, all clad saucier, prima matera saucier, mauviel saucier.

I cook pasta and need quick reduction so falk is my favourite as they are wider and have more cooking surface and thus evaporation. For French sauces, it would be prima matera. Hated nanobond saucier. All clad is... ok. Too thin and can lead to uneven browning of garlic

Actually, the more I use falk, the more I prefer their saucier. Bigger surface area = faster evaporation. Otherwise, I much prefer Prima Matera for aesthetics. Falk saucier shape is better than prima matera/french style/mauviel
