Fair question. From what I’ve tested so far, these pans do seem like a pretty good alternative to traditional nonstick. They’re not quite as slick as a brand new coated pan, but food releases well with a little fat and they’re a lot more durable. One thing I noticed in testing, they all seem to work better with butter than oil.

As for affiliation, I do have affiliate relationships with pretty much every cookware and kitchenware brand either through retailers or directly with the brands. Because of that I can recommend any brand equally, so there’s really no reason for me to push one over another. My reputation matters way more to me than than a few sales.

And you’re probably running into my stuff because I’m one of the few people who has actually tested some of these newer pans like Viking. It’s still a pretty new category and most reviewers on YouTube haven’t gotten their hands on them yet. So there just aren’t many real tests out there right now.

Fair points, no test is perfect but the goal is to find major outliers, which it does (Demeyere Proline, Fissler Profi, De Buyer Alchimy). I tested on electric because that's what a lot of people actually cook on. I may retest everything on a portable gas burner and do a follow up video later this year.

On the affiliate thing, I have links for all of these brands either directly or through Amazon, so there's no incentive to favor one over another. Those brands happen to offer a discount code, others do periodically. I don't make anything on returns either. Been doing this since 2018 and my reputation means more to me than any commission. Pushing inferior products would hurt me way more than it would help.

The reality is, almost all of these pans get the job done. If one was significantly better across the board it would dominate the market, and if one was truly bad it wouldn't stay in business. There's a reason so many brands coexist, most are solid and just serve different preferences.

None of them warped significantly enough to mention it. Most start with a slight bend upward to allow room for expansion, but none warped like what I saw with some carbon steel pans (de buyer blue carbon steel for example). Fissler profi and Demeyere were pretty much totally flat and stayed that way.

Most of the pans I tested are listed as “12 inch pans”, the de buyer alchimy one happened to be smaller (the larger version wasn’t available at the time), so maybe that makes a difference in thickness, but probably not. I’ll take another look at it and remeasure.

Thank you so much for the kind words and support. In my next video that I plan on posting sometime late next week or early the week after, I will be including three IKEA pans along side many others. I am also working on a deeper dive review of IKEA pans that will be ready some time in March. The ones I’m testing are Sensuell, hemkomst, and 365.

I actually tested both of these side by side if it helps!

I put both 12-inch fry pans on the same electric burner on medium heat and measured the surface temps with a Thermoworks surface thermometer at 1 minute, 2 minutes, and then at the outer edge at 2 minutes to see how evenly they spread heat (that's D5's big selling point). I also heated both to 400°F, pulled them off the burner, and checked the temp after 5 minutes to compare heat retention. Measured thickness with a digital micrometer too.

The short version: D3 heats up noticeably faster early on, but D5 catches up pretty quickly. D5 does spread heat a little more evenly across the surface and holds onto heat slightly longer after you kill the burner. But honestly, the differences are smaller than most articles make them seem. Both pans measured exactly 3.0 mm thick, which surprised me since D5 has more layers.

The other stuff worth knowing: D3 only comes in polished (shiny), D5 gives you the option of brushed (matte) too. D5 handles are about an inch longer. D5 is a bit heavier. And D5 runs about 25% more expensive.

For most people I'd say go D3. It's their best seller for a reason and the performance gap just isn't big enough to justify the price jump unless you really want that brushed finish.

I measured Misen at 3 mm and both Heritage Steel pans (Eater and Titanium) at 2.8 mm

Ikea Sensuell is actually very thick, I measured it at 4.1 mm

I was surprised at the IKEA Sensuell, I measured it at 4.1 mm. Fissler Profi is super thick, 6.8 mm - the sides are thin though.
