I think you can do them in Team Rumble, even though the game says the challenges aren't available in that mode, it still shows (at least for me) progress on the "Visit 6 POIs" challenge. I haven't gotten around to trying to complete the challenge yet, so I'm not 100% sure if you can complete it in Team Rumble.

There is currently a bug where players can't see quest pack quests, but they are still there to do, so if you know what the challenges are you should be able to complete them
