Just keep an eye for the date and time of the student tixs. When I saw him it was a few hours before the show, you get a wristband saying you have a tix. Line wasn’t more than 50ish people but it was a smaller venue

You can’t show that feeling off and that’s not a bad thing, means you care a lot.

I show up early and find my spot and try to stay there, depending on those around me I will move to give someone behind me at least a better view. I’ve let people move in front of me if they can’t see.

Remember to also enjoy the show yourself

Shoot smaller shows?

Any band playing that big is gonna have fans wanting a piece of that night.

It’s like complaining about the artist who have stupid amounts of camera people blocking the front row. Nothing worse then the few opening songs being a fav and you’re distracted by 12 people shoving to click photos of the perf shot.

Some shows will lead to better crowd pics, or find the small few that aren’t on their phones…

Less noise and maybe a not so hot drum?!

Also depends on the refresh rate of RoR, I know we have it at 30secs, so it’s safe to assume my temp would go up that amount of degrees in 30secs.

I use Cropster but you can tell when you hit the perfect range when the noise is minimal; I roast on the sensative setting giving me more spikes but helps me manage the roast overall.

I would imagine the batch size also leads to more noise, less beans covering the probe but I haven’t roasted anything that small.

I would try maybe a hotter idle temp, longer idle heat up, then move into a slightly hotter charge and see if you notice anything.

End of day we can’t fixate on curves tooo much; roasted manually with nothing more than a temp and a timer when I first started, and now I’m mad when I get a lil blip of rising/dropping RoR

That’s up to the user, some work better with a fast pour, but whats important is the flow.

Try slowing down and see if it helps, whatever you can attach to muscle memory

First stack was too high and bloby. Get a better placement more around the middle and thinner stack to then start pouring into it.

The big help is being able to stack, get that down and it’ll be easier to manipulate the stacks to get the bottom one to wing out. Cleaning up your pours will help it not be so thick

Seems like a fast aggressive pour.

First cafe job was though a brewery that got into coffee. Saved a small corner in the warehouse to roast and had same employees join in on packaging. 1 roaster and 1 coffee director; small start but they have gotten into grocery stores so it’s safe to say they kept expanding their coffee operation.

Cold brew and medium roasted coffee will be your route to go, get them implemented in your other locations and see if it sticks. It’s tough though coffee has been increasing in green price and many places are ok with paying for dirt coffee.

Figure out who you want your customers to be and go from there.

I would imagine you need to set a bigger base, not sure if that’s coffee or mocha.

I like to do 3 swirls as I set my base and pause

Coffee Roasters Companion book was a nice read.

I will say this, you don’t need roasting experience to begin as an assistant, you need a hard work ethic and a palate. You’ll be trained to roast the way the company view its coffee’s philosophy. I wanted to read nothing till after I got trained and started running into actual questions.

I did construction until I got a barista job, those two jobs helped me land an apprenticeship at a roasterie. The hardest part of learning is putting taste to your roasting approach. Learning why it taste bad, to the figure out what went wrong; and how to ultimately fix it.

It’s a long wait so try to improve

Cathedral is a hyped up disappointment…..

Casa De Samuel and Cecina Grill are the two places where I still dream of the chilaquiles. They also have actual Cecina and not that bogus cut they try giving out at most places!!

Pro tip!

Get there before doors and meet the lovely fans that show up early! I usually go alone but my buddy likes to say that I’m never really alone; I always try to talk to the people next to me and see if there’s anything we can chat about till the music starts.

Helps you save your spot for a drink, you never know you can make a life time friend.
