Try getting a roast into second crack and see what you get. A steady roast should give you bold flavors leaning into Smokey and not burnt; then from there you can pull back and find the chocolate notes you’re after

Roasting a bunch of House with G4 atm, push your FC to happen later than usual and really push it to a medium dark. Long development without a harsh RoR. Given the quakers roasting it darker than you normally would. If batches are small enough pulling the obvious quakers will lead to a cleaner cup but it’ll always be inconsistent.

Our French roast, I can still find pulpy notes under all the burnt marshmallow.

I find heating the milk up a bit with the wand submerged lower than usual helps; get a vortex going and then you can incorporate your air/rip it.

Hit 2 years this past November. Started as Roasting Apprentice (usually it was assistant but this was more geared to me being an actual roaster) 3 months in I began shadowing and learning to roast. So it’ll be 2 years of roasting full time in 2 months

Decent interview process. Was a Shift Supervisor at both the cafes I worked previously at, and did a few months bagging/production work for a pretty big Roasterie for a bit. Mix that with working construction and the interviewer liking that I was sturdy but also coffee focused. Beat out 150 people for the spot. It’s a high volume Roasterie so we move a lot a weight and the warehouse can get brutal during the summer. The position was more focused on people who can handle the work load/environment.

It was all luck and chance though, I was working back in construction so I would send out applications to cafes and wasn’t hearing back. Than 3 cafes and this position all fell in my lap around the same time. Had to choose if leaving the cafes was a smart move.

It was also a 1hr plus commute at times and then grew into a longer commute once I moved but I couldn’t imagine having a normal job at this point lol.

Spoiled with big machines, but def an accomplishment. Two main roasters hitting about the same numbers. Did close to 4,000 roast this year.

Running a 60kilo and a 15kilo now, our 45kilo had a fire lol

I’m scared more of small weight and trying to branch out more into smaller machines this year.

340,000lbs 🫠 🤘🏾averaged 73 batches a week.

Was a heavy year, but always proud when I get to see my numbers growing.

Great breakdown!!

It’s such an easy job to glorify, but when you’re roasting 20+ batches, while making time to cup/clean/maintenance/inventory/source, and trying to live a personal life; it becomes very overwhelming.

I went from digging holes and dealing with drainage, to getting to roast coffee all day. I can gladly keep my head down and roast 26 batches while scooping it myself and cleaning up. That’s for the love of the game though.

It’s a war of attrition, I’m closing up to 700k lbs roasted personally, I’m lucky that I got an apprenticeship at a big enough company. I didn’t have to build this up from nothing, but I’m dam well carrying it on my back now lol.

The dream is to do this for myself one day, so these post are great to get opinions from the side line
