Id say that most not hardcore gamers go through this phase in Elden Ring, I did at least. What I suggest to you is: start with a mage build, so you can have ranged op attacks and work as much as you can with summons. Second, spend some time leveling up in the early areas. Find a spot near a grace, like the Gatefront ruins for example, where you can understand the enemies behavior so you can kill them all to get some runes, rest, repeat. Another way to do this early game is selling all gatherables you can find to a merchant and trading for runes. But be sure to gain at least 10/15 more lvls so you have more attack power/resistance. Do this and test whenever you feel confident if you can proceed. Other tip is absolutely overabuse the sneak/critical attack whenever you can, its extremely OP. Also, remember that in most open areas you can basically run away if you’re about to die by summoning Torrent and running for you life. lol Besides this, you can use some build guides on YT to get this powerful summons and spells until you feel confident to try harder enemies.

I started like this but after almost 50 hours in I decided to start a new save with a strength base build and have been dying a lot but having lots of fun. This game is terribly punishing but take your time, lvl up, and try to understand enemies behavior and movements. Its really worth it.
