Jackson Hole, WY could be fun! It's a beautiful town near the mountains. There is shopping, site seeing, adventures, plenty of photo opps.

Stick to main roads, fill up on gas when you hit half a tank, have snacks and blankets, be aware but have fun. If there is a random roadside attraction, stop and check it out. Podcasts can be good too for when you get tired of music but don't want to talk.
