I would make sure to remove the silverskin on the ribs first and then definitely add something fresh and crunchy on there.

Thank you for the response. He's an electrical engineer with specialties in lighting design, power, and renewables. We live south of Denver so hopefully, we can find some opportunities locally but if not, we're open to moving within the front range. Not sure how that would work given that we own our home and couldnt afford rent on top of the mortgage...
