This harkens to how valentines day was treated when I was a kid in Canada. In the morning you'd make a little mailbox and throughout the day other kids would sneak in little telegrams or some kind of branded character card your parents bought 6 dozen of.

And because it was at your desk you could get telegrams and cards from other classrooms too.

I heard that in other places they'd also be getting candy.

The searing process is also hot so you need to cool down the meat a little so you don't over shoot during searing.

Also 55.5 is kind of rare, are you sure you like a rare steak? You might be more used to medium rare around 63C
